A reminder to myself and whoever is reading this, that, what we feed (or don't) our body with always has an impact on us and how we function. My diet has not been very good these last 5-6 weeks and I now realise that it has been affecting my mood. It's not that I've not been eating healthily but rather I've not been eating enough. Been waking up with headaches almost every day and having really sudden mood swings throughout the week. Second lockdown has officially started and so, I have decided I will be focusing more on my diet and making myself feel more energetic again.
Ingredients:
-new potatoes
-asparagus
-olive oil
-salt/pepper
-rosemary
for sauce:
-(vegan) yogurt
-mustard
Very quick and simple steps for a flavoursome and herby meal.
Wash and boil the potatoes for 10-12mins. In a bowl season them with some salt, pepper and chopped fresh rosemary, plus a drizzle of olive oil. Same goes for the asparagus (but without boiling them).
In a ceramic dish, pour a tiny bit of water, place your potatoes and asparagus and add a little more olive oil on top. Cook in the oven at 180°for 20-25mins.
For the sauce I just mixed some (vegan) yogurt with mustard and drizzled it over the cooked asparagus.
