A more simple and brunchy recipe for this lovely (weather wise) Sunday. After last night's announcements of a second, four-week lockdown I must admit I felt, all of a sudden, under the weather. I am a massive fan of Halloween and not being able to do anything was quite upsetting but I got over it. I decided I would cheer myself up today though, and start this new month off in the best way possible. Good food and good company is all I need right now. Wishing everyone a good month ahead even under these horrible circumstances.
-1 egg
-1 avocado
-3 tbsp cottage cheese
-2 slices of toast
-1 tbsp lemon
-chilli flakes

For the avocado spread, smash the avocado in a bowl and add 3 tbsp of cottage cheese and 1 tbsp of lemon juice. Season it with some salt/pepper and chilli flakes and mix it all together.
Spread the avocado mix either on toast or sourdough (I think I prefer it on sourdough but I didn't have any this time) and add an egg too to complete your dish. I think poached egg really suits this dish but you can scramble or fry yours. Completely up to you!
The finishing touch is the pomegranate. This was the first time I tried pomegranate with avocado and egg and honestly I couldn't recommend it enough. Please try it out, I promise you won't regret it!​​​​​​​
